Is that one of those days where you got busy all day long and then you forgot you had company coming for dinner? No worries. Pasta al Pesto is always a good choice and so easy, it will take you no more than 20 minutes.
3 cups of packed fresh basil
4 gloves of garlic
1/4 cup of pine nuts
1/2 cup of chopped fresh parsley
1/2 of olive oil
3/4 cup of grated parmesan Cheese
Combine basil, garlic, nuts and parsley in a food processor, blend until smooth paste. Slowly while processing add the olive oil. pour it into a bowl and add parmesan cheese.
That’s it! Pour it into your pasta al dente with some bread and tomatoes with mozzarella cheese and there you have your dinner.
